SWEET POTATO AND BISON HASH
This is a perfect winter meal loaded with protein rich foods. This is great for breakfast, lunch or dinner!

INGREDIENTS:
1 lb grass-fed bison (can sub out other proteins)
Salt and Pepper
1 tsp chopped thyme
½ tsp chopped sage
2 bags frozen sweet potatoes, diced and thawed (about 2.5 cups)
½ sweet onion, diced
1 red bell pepper, diced
4 cloves of garlic, minced (or 4 frozen cubes)
1 tsp cumin
1/2 tsp chili powder
½ tsp garlic powder
½ cup bone broth
2 handfuls of chopped kale (2 cups)
TOPPING (optional):
2 eggs, soft boiled
green onions
DIRECTIONS:
1. In a large oven safe pan, heat 1 tsp olive oil or olive oil spray until hot. Add bison, salt, pepper, thyme and sage. Cook until browned through. Remove and set aside in bowl. Preheat oven to 450.
2. In the same pan, heat more olive oil or spray and add sweet potatoes, onion, bell pepper. Sauté for about 5-8 min. Add garlic and spices. Stir well. Add bone broth. Stir in kale. Put lid on top and cook until sweet potatoes are tender, and liquid has been absorbed. Stirring occasionally.
3. Remove lid and put pan in the oven. Let bake for 15-20 minutes or until crispy on top.
4. Serve immediately hot with soft boiled eggs on top. Or Let cool and store to add to salads at lunch, with eggs at breakfast, or over rice for dinner.
