SUPER PROTEIN SUPER BOWL NACHOS

INGREDIENTS:
2 cups cottage cheese
1 cup shredded jack cheese (or shredded Mexican cheese)
2-3tbsp milk (I used whole)
2 tbsp taco seasoning (cumin, chili powder, garlic powder)
2 cups rotisserie chicken
1 lime
1 bag of Siete Grain Free tortilla chips (I did half blue/half white)
1 can black beans, washed and drained
½ bag frozen peppers and onions (or 1 bell pepper and 1 red onion thinly sliced)
Toppings:
2 green onions
½ cup pico de gallo (or more!)
½ cup Greek yogurt
½ avocado, sliced
Hot sauce and salsa of choice
DIRECTIONS:
1. Preheat oven to 375.
2. Make Cheese Sauce: In a small blender, combine cottage cheese, ½ cup shredded jack, and 1 tbsp taco seasoning. Add 1 tbsp of milk at a time until you get a thick but smooth consistency (think your favorite queso!) Pulsing continuously.
3. Pull rotisserie chicken (preferably unseasoned) and add rest of taco seasoning and lime juice. Toss until well combined. Taste and set aside.
4. Sauté peppers and onions with avocado spray until tender. Season with salt and pepper, if needed. Set aside
5. Line a sheet pan with aluminum foil. Toss chips evenly on pan so they are spread out. Now start topping! First pour the cottage cheese sauce, then beans, then peppers/onions, then chicken, then top with remaining shredded cheese.
6. Bake at 375 for about 15 minutes. Then, turn broil on HIGH and broil for 3-4 minutes watching closing.
7. Remove from oven. Top with all toppings (or toppings of choice!!) GOOOOOO SPORTS!
