INGREDIENTS:
6 eggs, hard boiled (4 whole and 2 egg white only)
½ cup low fat cottage cheese, blended in processor
1 tbsp Dijon mustard
1 green onion, sliced thin (green and whites)
1 tbsp fresh dill, chopped
3-4 slices bacon, chopped (can sub turkey bacon for less fat)
½ lemon, juiced
Salt & pepper
Red chili flakes (optional)
DIRECTIONS:
1. Grate eggs against a cheese grater to get a nice texture. Make sure you remove two yolks and just grate the egg whites for two of the eggs. If you don't have grater, chopped is completely fine.
2. In a large bowl, combine all the ingredients above (make sure you blend the cottage cheese in a small food processor or blender for a smooth texture).
3. Taste and season accordingly. Serve with more fresh dill!
