PESTO CHICKEN SALAD

 

Makes 4 servings (approx. 1 cup per serving)

Calories: 250

Protein: 30 grams

Fat: 12.5 grams

Carbohydrates: 2.5 grams

  Fiber: 0.4 grams

 

INGREDIENTS:


2 cups shredded chicken (rotisserie without skin/fat)

½ cup celery, diced

¼ cup green onion, diced

2 tbsp mayonnaise

½ cup cottage cheese, 2%

1.5-2 tbsp pesto (I used a nut-less version for lower fat)

Red Pepper Flakes

Salt and Pepper

 

DIRECTIONS:


1.  In a large bowl, combine all the ingredients. Mix with fork until well incorporated.

2. Serve with fresh grated parmesan on top to be extra! Great with crackers, on sourdough, or by itself!

I have probably made this 4 times over the last few weeks- delicious!!! I always add diced bell peppers and it adds nice crunch and color! A staple in my house from now on!
