MASTERS TRIO CHICKEN SALAD


Makes 4 servings:

INGREDIENTS:


2 cups chicken, (rotisserie chicken with skin removed)

3 hard boiled eggs, finely diced

2 tbsp mayo

½ cup Greek yogurt, 2% plain

1 cup lite shredded cheddar cheese

¼ cup pimentos, drained

1/2 tsp smoked paprika

½ tsp garlic powder

1 tsp ground mustard

Salt and pepper

Juice of ½ lemon

 

DIRECTIONS:


1. Add all ingredients to a bowl and combine well with a fork.

2. Taste and season accordingly.
