I found this recipe on @halfbakedharvest and knew it was a winner. I put some of my twists on it and this hit it out of the park. I made this for girls night and one of my friends is dairy-free so I made a batch dairy-free because it is such an easy soup to manipulate.
Ingredients:
2 tbsp olive oil (4 if you are going dairy free)
2 tbsp butter (omit if dairy-free)
1 sweet onion, diced
4 garlic gloves, minced
2 tbsps fresh thyme
2 carrots, diced
3 tbsp All Purpose Flour (could use GF flour here)
6 cups chicken stock, I used bone broth to up the protein 1 small head cauliflower, broken into florets
4 cups broccoli florets
2 bay leaves
1 tsp garlic powder
1 tsp paprika
1/2 tsp cayenne (more or less depending on heat preference)
salt and pepper
3/4 cup full fat coconut milk
1 lemon, squeezed
1-2 cups cheddar cheese, shredded from block (sub dairy-free cheese here!!)
Directions:
1. Heat large dutch oven over medium heat. Add butter and olive oil to melt. Stir together.
2. Add the onion, carrots, garlic, and thyme and cook for about 10 min until onion is soft.
3. Sprinkle the flour over the veggies. Stir until golden. Then, slowly whisk in the chicken broth. Add the cauliflower and bring to a boil. Cover and cook until cauliflower is tender (approx 10 min). 4.. Use an immersion blender and blend the soup until smooth. (If you don't have immersion blender then transfer the soup to a blender and purée until smooth.)
5. Return soup to pot and/or Add some water if too thick. Next, add the broccoli, bay leaves, paprika, cayenne, garlic powder and salt and pepper.
6. Bring to a simmer over medium heat and cook, uncovered, until the broccoli is tender, about 10 minutes.
7. Remove the bay leaves and blend the soup with immersion blender until the broccoli is finely chopped, but some chunks of broccoli remain.
8. Turn soup on low heat. Stir in the coconut milk, lemon juice, and cheese (add dairy free cheese on this step) until melted and creamy.
9. Taste and season as needed. Spoon into bowls and top with more cheese and thyme!!
