Do NOT miss out on chicken thighs! They are so much juicier and they are really hard to mess up!



Macros Per Chicken Thigh:

Calories: ~230 kcal

Protein: ~30g

Carbs: ~5g

 Fat: ~9g

Fiber: ~0.4g

 

INGREDIENTS:


4-5 chicken thighs, skinless with fat trimmed

3 tbsp Dijon mustard

1 tbsp honey

1 tbsp olive oil

4 garlic cloves, chopped

½ shallot, minced

1 tsp thyme, dried

1 tsp rosemary, dried

Salt and Pepper

1 lemon, juiced


DIRECTIONS:


1. In a ziplock bag, combine all ingredients minus chicken thighs. Add chicken thighs and massage marinade well into skin. Store in fridge for 20 min- overnight.

2. Preheat oven to 400. Line sheet pan with parchment paper. Lay down chicken thighs (add veggies here too if you want and toss them in marinade!) and bake for 25-30 min until internal temp reads 165!

3. Enjoy with a side of garlic roasted potatoes and vegetables.
