High Protein Chocolate Peanut Butter Easter Eggs

PROTEIN EASTER EGGS
Makes 5 large eggs or 10 small eggs:
Per servings (1/2 large egg or 1 small egg):
Per 1/2 Egg (10 Servings):

Ingredients:
2/3 cup creamy peanut butter, (get the one with peanuts only)
1 scoop protein powder (flavorless)
2-3 tbsp coconut flour
2 tsp monk fruit sweetener (or 1 tbsp maple syrup)
1 bag lilys dark chocolate
1 tsp coconut oil
Flaky sea salt
Directions:
1.In a small bowl, combine all ingredients except chocolate, coconut oil and sea salt. Mix until well combined. It should form a dough you can hold in your hands. Add more coconut flour if too sticky and melty.
2. Scoop out with cookie scoop or spoon. Form into egg shapes on a baking sheet lined with parchment paper.
3. Put peanut butter in freezer for 30 min to set.
4. Right before peanut butter is ready, melt chocolate with coconut oil in microwave on low in 30 sec intervals stirring every time. Should take 2-3 times. Watch it carefully.
5. Dip frozen peanut butter in chocolate using a fork and put on parchment paper. Sprinkle with sea salt. Put make in freezer until set and keep in freezer all week!
