Healthy Beef and Broccoli
Woah. This one is soo easy and so delicious. I also have two hacks that I use every time I make a dish with garlic or ginger (basically any dish in my house!).
Hack for fresh ginger: use the back of a small spoon to remove the skin.
Hack for fresh garlic: purchase this garlic mincer on amazon. Game changer.
This needs to be added to your weeknight meal rotation because not only is it easy, healthier than the take-out version, but my kids actually liked it. Enjoy!
Ingredients:
Olive oil
1 lb steak, thinly sliced
1 inch fresh ginger, minced
4-5 garlic gloves, minced
3 cups broccoli florets
Salt and pepper
¼ cup water
1/2 cup coconut aminos (or soy sauce), divided
2 tbsp sesame oil, divided
½ tbsp corn starch (or arrowroot starch)
Green onions, sliced for topping
Sesame seeds, for topping
Chili flakes (I left this until the end so my kids would eat it)
Directions:
1. Thinly slice steak against the grain. Season with salt and pepper.
2. In a bowl or ziplock, combine ginger, garlic, 1 tbsp sesame oil, 1 tbsp olive oil, and ¼ cup coconut aminos. Add steak and cover with sauce. Let marinade in fridge while prepping sauce and broccoli.
3. Chop broccoli into florets.
4. Make sauce by combining remainder of coconut aminos and sesame oil. Stir and add corn starch. Wisk until well combined.
5. Heat a large skillet over medium high heat. Once hot, add some olive oil. Toss in steak. Let brown on one side then flip and cook until slightly under done. 3-5 minutes.
6. Remove from pan. Add in broccoli directly to hot pan. Add salt and pepper. Add ¼ cup water and cover broccoli to let steam. When broccoli is bright green and slightly tender, add back the steak, steak drippings and sauce.
7. Turning down heat to medium low, stir until sauce is thickened and dish is well-incorporated.
8. Remove from heat. Serve over a bowl of rice. Add green onions, sesame seeds and chili flakes.
